Colourful, healthy and delicious! This week founder of Mind Body Bowl, Annie Clarke shares her summer ready, red cabbage salad.
Serves 4
200g cherry tomatoes
300g red cabbage
2 spring onions
30ml sesame oil
30ml apple cider vinegar
30ml brown rice vinegar
1 teaspoon brown rice miso
sesame seeds
– Shred the cabbage thinly (I use the blade on my magimix to keep it really fine!) and place in a large mixing bowl.
– Quarter the tomatoes and slice the spring onions thinly and add these in to the bowl
– Then add all the other ingredients, except for the sesame seeds, then mix well using your hands.
– Then sprinkle with sesame seeds to serve.
