We have officially found our new favourite lunch!  This tasty and super healthy, chilled avocado and coconut soup by Nutritional Therapist Xochi Balfour is perfect for hot summer days…

Serves 4 as a starter

Ingredients:

2 ripe avocados, peeled and pitted (ideally organic)

2 cans of organic coconut milk – I use Biona (leave a little of the cream for serving)

Juice of 1 small lime

1 small clove garlic

1 handful parsely

1 handful coriander

1 heaped tsp ground cumin

1/2 tsp smoked paprika

Salt and pepper to taste

Chives to garnish

Blend all the ingredients until smooth and taste. You may want to add more cumin / paprika / garlic / salt / lime… see what your tongue tells you.

Chill before serving with a garnish of greens and chive and a sprinkle of black pepper or try a handful of  toasted nuts or seeds.
